'Elstar' is a very well-known and popular Dutch apple variety. The tree is medium-sized with a semi-open, flattened spherical crown. The tree grows (5)6-8 m tall. The tree flowers in late spring. The dark pink flower buds open around mid-May to early June. The flowers are light pink. Apples can be picked from the second week of September until the end of September. These are small, round and very regular in shape. They are yellow-green with a deep bright red blush and stripes. The colour is very dependent on the amount of light the apples receive. Inside the tree, 'Elstar' apples are significantly greener. The flesh is quite firm, creamy white, juicy and characteristically sweet-sour aromatic. The flavour is fresh sweet-sour and somewhat honey-like. 'Elstar' is an excellent hand apple that also keeps well. The apples are great for cakes and in salads, but unsuitable as a purée apple or for juice. Good cultivar for use in private gardens.
